#AwesomeFriends & an AWESOME recipe – What more could you ask for?


There are a number of things I am grateful for but what is life without great friends? One of my BFF’s in California also happens to be my neighbor. I realize not everyone is lucky enough to have a neighbor they consider family but Robin is. I swear we are kindred spirits. She is one of the sweetest, funniest, kindest, most selfless, generous and thoughtful people I know. She brought me fresh (I MEAN HOT FROM THE OVEN) Pumpkin chocolate chip bread the other day. How sweet is that? Well considering she started work early (like 4 AM!), came home mid afternoon and then was sweet enough to make two loaves for me, She is pretty darned AWESOME! She wanted to be sure I had a little something after I had my surgery-how SWEET is that? Yes, I have awesome friends and I am very blessed. With her permission, I HAD to share the recipe because it is JUST THAT YUMMY!!! So a HUGE THANK YOU TO ROBIN and from me to you… I am paying it forward 🙂 ENJOY!!!

Chocolate Chip Pumpkin Holiday Bread Recipe


1 stick of butter

2 2/3 cup of sugar

4 eggs

1 (1 lb) can of pumpkin

2/3 cup of sour cream

1/4 cup of vegetable oil

3 1/3 cups of flour

1 tsp baking soda

1 1/2 tsp salt

1/2 tsp baking powder


2 tsp cinnamon

1 tsp coriander

1/2 tsp ginger

1/4 tsp cardamon

1/4 tsp fresh grated nutmeg

1/8 tsp ground cloves


12 oz. Mini Chocolate Chips


Preheat oven to 350 degrees. Cream butter and sugar until fluffy; stir in eggs, pumpkin, sour cream and oil. Mix well. Mix spices together and add to wet ingredients; stir in thoroughly. Mix separately the flour, baking soda, salt and baking powder. Blend the two mixtures together. Stir in the chocolate chips. Pour into greased and floured mini loaf pans. Bake 60 minutes or until wooden pick inserted into center comes out clean. Remove from pans and let cool on rack. This recipe makes 5 mini loaves. Enjoy!
